Beetroots (and most vegetables really) are best eaten raw since cooking might destroy most of the nutrients they contain. Or – my favourite of all – you can just juice them up. I find beetroots a bit too “earthy” though, but combined with some carrots and oranges, it’s perfect!
Ingredients
Beetroot, 1 large or 2 small
Carrots, 2 large
Lime, 1
Blood orange, 1
Fennel, a big piece (take a look at the pic)
Ginger, 2-3cm
Procedure
In your (slow)juicer, start with a carrot, juice all the ingredients and finish off with the second carrot.
Pour it over some ice-cubes and enjoy!
Beetroots contains a fair amount of nutrients such as protein, phosphorus, zinc, fibre, vitamin B6, magnesium, potassium, copper, and manganese; and they are also an excellent source of vitamin A, vitamin C, calcium, and iron.
They also contain lots of sugar so don’t over do it!
