The Sun Dried Tomato & Roasted Bell Pepper Hummus

I love hummus, but I have to admit that I’m getting a bit tired of the traditional chickpeas hummus, aren’t you? It’s good, healthy and everything, but why not spice it up a little? 

This recipe will take you to Provence (you know, that beautiful region in the south of France), it’ll bring some summer vibes in your kitchen- and if it’s winter where you are at the moment, I bet it’s welcome!


The recipe


Ingredients

  • Chickpeas, one can 

  • Sun dried tomatoes, about 100g

  • Bell pepper (red or orange), one

  • Olive oil, 5 tablespoons 

  • Tahini, 2 tablespoons 

  • Garlic, one big clove

  • Juice of one lemon

  • Cumin, a pinch

  • Salt, pepper

  • A bit of water


Instructions

Pre-heat the oven to 180°C. 

Chop the bell pepper roughly, display the pieces on a baking sheet and set in the oven for about 10-15 minutes, until they get very soft.

In the meantime, drain the chickpeas and rinse them well. Put them in a mixer with the lemon juice, olive oil, tahini and garlic – mix until smooth. If the mixture is too dense, you can add a little bit of water to make it smoother – one tablespoon at a time.

Add the sundries tomatoes and the bell pepper, mix again.  

Add a pinch of cumin, salt and pepper to taste.

You can serve it as a dip with some raw vegetables or some crackers, or use it as a spread on some bread! 

 

What are chickpeas good for? 


They are full of protein and fibre. 200 grams of chickpeas contain about 15 grams of protein and 12.5 grams of fibre. They’re also a good source of healthy fats, carbohydrates, B vitamins, and minerals (calcium, potassium, phosphorous, iron, zinc and magnesium). Not too bad, huh?
