The coral lentil crust

This recipe was inspired by my lovely colleague Luisa, in the course of a conversation about experimenting cooking.

Ingredients:

  1. Coral lentils, 200 gr – or any other colour of lentils actually!

  2. Sesame seeds, a tablespoon

  3. Grated parmesan cheese, a tablespoon

  4. Curcuma, a teaspoon

  5. Salt and Pepper

Procedure:

Pre-heat your over to 180°C.

Boil some water with a pinch of  salt, and add the lentils. I advice you to cook the more than you normally would. Drain them well, use a strainer if you have one.

Grab a baking tray and grease it with some coconut or olive oil. Spread the lentils on the tray, sprinkle the parmesan, sesame seeds and curcuma. Add salt and pepper.

Leave in the over for a good 20 minutes, until nicely crusty.

Allow to cool down and enjoy with some cauliflower humus or any other dip.
